Chicken and Nectarine Lettuce Cups

Before nectarines are out of season, you HAVE to try this recipe! It is super healthy, quick and easy to make, and so refreshing! You can mix the filling together in 20 minutes and you don’t even need to turn your oven on if you buy pre-cooked chicken. It’s the perfect summer recipe! It is great for making for yourself, or pretty enough to serve to guests.

I first cut a slit from top to bottom, all the way to the pit. Then, I slice another cut right next to the first cut, all the way to the pit. If you get the two cuts close enough together that they meet at the pit, the slice with slide out. You continue make thin cuts, one next to the other, making your way around the whole fruit.

Chicken and Nectarine Lettuce Cups

Ingredients:

  • 1-2 limes
  • Vegetable oil
  • Smoked paprika
  • Sea salt and black pepper
  • 2 cups cooked and shredded chicken*
  • 2 nectarines (or peaches if you prefer)
  • 1/4-1/2 cup sliced red onion (based on preference)
  • 1 jalapeno pepper, seeded and minced
  • butter lettuce (at least 8-10 large cups or more if smaller)

Directions:

Rinse the butter lettuce so it can dry as you prepare the filling.

In a larger bowl, whisk together 2 Tablespoons lime juice, 1 Tablespoon vegetable oil and ½ teaspoon smoked paprika. Add sea salt and black pepper to taste.

To the same bowl, add the 2 cups of shredded chicken, 2 thinly sliced nectarines, 1/4-1/2 cup sliced red onion, and jalapeno. Stir everything together well and divide among the lettuce cups.

You can certainly save the leftovers for the next day, but by the 3rd day, the nectarine slices will start to get pretty soft. If you don’t want to make lettuce cups, you could also put the filling on top of a bed of lettuce for a salad.

*I used rotisserie chicken, which made this very quick and easy! If you want to make your own chicken, this is my favorite way to do it: Heat oven to 350 degrees. Rub chicken breasts with olive oil, sea salt, and pepper. Roast for 35-40 minutes or until cooked through.

Wunderlist App

This app is a life-changer. I have never been so organized or prepared! Wunderlist allows you to keep multiple organized lists stored in the app, so your “To Do’s” and grocery lists are always at your finger tips. (Assuming you didn’t forget your phone at home!) I love that all of my lists are in one place, stored electronically, and easy to update any time of day, no matter where I am! And, it’s free!! I keep it in my favorites at the bottom of my home screen:

www.sarasfavoritethings.wordpress.comAnything that I used to keep written on a notepad, now has it’s own list in my Wunderlist app. I keep an ongoing list of groceries, things I need to do, movies I want to see, packing lists for vacation, etc. You can create and title as many lists as you want and then when you click into that list, you can add items to it. To cross an item off the list, you can check the little box to the left of the item. Or, if you want to prioritize something, you can click on the little star on the right, which it marks the item red and moves it to the top of your list.

www.sarasfavoritethings.wordpress.comIf you click on the little arrow in the bottom right hand corner, it gives you the options to share ownership of the list with someone, email the list to someone, or organize the list alphabetically. If you click to share the list with someone, they are able to add items to your list or cross things out. This could be great for sharing with a roommate a list of communal things you both need, such as paper towel. Or, you can click to email your list to someone and an email with your bulleted list pops up. I used it to send a list of groceries to my mom for an upcoming vacation.

When I click into the recipe, there is a little notes section where I can keep the ingredients listed for when I’m ready to make it. I also like to keep a list of gift ideas, when I think of something my family or friends might like or if they mention something they want. When I click into their name, I can makes notes of the gift ideas.

When you first open the app, you can use your email address to create a username. It will then take you to your inbox. Swipe to the right to start creating your lists. Your screen will look like the one below on the left with the default lists already created. You can delete any you don’t want by clicking the edit button in the bottom left hand corner. Or, you can select “Add a list…” to create any personalized lists you would like.

There have been so many times when I wasn’t planning to stop at the grocery store, but it ends up being on the way and I have my list ready to go on my phone! My Blog turns 1!

Exactly a year ago today, I sent out my first blog post! I can’t believe it’s been that long already! I have loved sharing all of my favorite things with you. It is so much fun getting an email or hearing from someone that has tried something from my blog. I think I’ve really made it big time, now that I have my own branded cutting board…thanks MOM ;)

Looking for a good book?

About a year ago, I got a library card and seriously stepped up the number of books I’ve been reading. Since the book is due 3-4 weeks after I pick it up, I’m reading against a deadline! I keep the books I want to read on a waiting list, so they are constantly popping up available. If you haven’t had a library card since you were a kid, I recommend it! It’s free and I think you’ll find it’s a fun experience. I find it nostalgic to pick up the hard cover books wrapped in plastic and stamped with a call number.

I always find it disappointing to get to an end of a book and find it to have been pretty boring. All those hours invested in reading it are lost! So, I always love getting recommendations from people. Here are two books that I’ve read recently and LOVED! I promise you will enjoy them!

Joan was born in the 9th century, a time when women were judged inferior in every way and not allowed to learn to read or attend school. Joan defies the social restrictions by cleverly disguising herself as a man, moving to Rome, and rising through the ranks of the church to become Pope John Anglicus! I found myself constantly uneasy and intrigued by the decisions and sacrifices Joan has to make along the way, but inspired by her dedication to helping people and refusing to back away because she is a woman. This story is written as fiction, but in the end, the author includes several historical examples that arguably prove her existence. The facts are very convincing! The Catholic Church has done everything they can to erase Joan from history, as it was an embarrassment that a woman was able to deceive everyone of her gender and ascend to Papacy. Whether or not you believe Joan existed, her story will stay with you long after you finish this book.

9736930Before I Go To Sleep had my heart absolutely pounding in the end! I could not put it down before finding out how the heck it was going to turn out! It is a suspenseful story about Christine, a woman with amnesia, that loses all of her memories every night when she goes to sleep. She wakes up the next morning forgetting who she is and her husband, Ben, has to remind her every morning of their life together. At the encouragement of her doctor, she starts a journal to try to help trigger memories. She slowly starts to piece together her life bit by bit through this journal and realizes that she doesn’t know who to trust – can she even trust herself?? This is the kind of book that will keep you up late at night because you just have to know what happens to Christine!

Summer 2013 Song List

My dad is very hip when it comes to music. It’s common to hear him ask questions like “Hey Sara, have you seen the latest Beyonce music video?” And the answer is almost always no, he beat me to it! For his birthday, I always like to make him a CD with the latest music, so don’t be surprised if you pull up in your car next to his and hear Pitbull playing :) He’s all over it!

picstitch-6Last week, we celebrated his birthday up in northern Wisconsin on the Lake. So this year’s birthday CD was full of relaxing, fun summer music that was perfect for listening to while having some beers (or margaritas!) and grilling after a full day of skiing and swimming in the lake. (That’s my brother below, jumping the wake on 1 ski!)

Heading to a 4th of July party in a few days? I’ve got the perfect “dip” for you to bring! And don’t be surprised if you bring home the bowl licked completely clean. I could easily eat this for lunch or dinner. This is one of my favorite things to make when we know we have a crowd coming to hang out on the beach on Saturdays. I made it for the crew last night just to confirm and everyone gave it the thumbs up!

www.sarasfavoritethings.wordpress.comThere are three main reasons I like to make this for a big group. First, It’s very easy to make and creates a huge bowl that can feed a lot of people. The beans and corn really pump up the volume. Second, it’s best made the day before of several hours before you serve it, which is very convenient for bringing to a party. It will also last for a couple days if you have leftovers. And most importantly, people are always asking “who made that dip??” Because they want the recipe! That always makes me happy :)

If you do have some leftover, it is delicious as a salsa on grilled chicken, filler for tacos and omelets, or served on top of a salad, no dressing required.

Source (The Girl Who Ate Everything)

Ingredients:

  • 1 can black beans
  • 1 can black eyed peas or pinto beans
  • 1 can corn
  • 4-5 Roma tomatoes
  • 4 green onions thinly sliced
  • ½ bunch cilantro chopped finely
  • 2-3 avocados (ripe but still firm)
  • 1-2 limes
  • ½ cup Italian dressing
  • salt and ground pepper
  • tortilla chips

Directions:

Drain and rinse the black beans, pinto beans, and corn. Add to a large bowl.

You will want to make sure to remove the seeds from the tomatoes before you dice them so that they don’t add too much liquid to the dip. If you are using Roma tomatoes, slice them lengthwise and use your fingers to remove the seeds. If using tomatoes on the vine, cut them in half width wise to easily remove the seeds. Then add the diced tomatoes to the large bowl, along with the green onions and cilantro. Mix everything together.

The last part of the dip to add is the avocado. If you are making this the day before, I would recommend waiting until the day of the party to add the avocado so that it stays fresh. Dice the avocado and put it on top of the dip. Then before mixing it in, squeeze the lime juice all over it. This will prevent the avocado from browning.

Finally, add the Italian dressing and stir everything up. At this point, you can add as much ground pepper and salt as you would like. You can taste it a few times until you get it right.

Chill the Cowboy Caviar in the fridge for a few hours until it is cold and the flavors have marinated together. You will notice a big difference in taste once the flavors meld together. It’s delicious with big tortilla chips for scooping!

I’ve also got the perfect 4th of July T-shirt for you! I just bought this from Gap a few days ago and it’s been a hit! I bought the periwinkle color and have received lots of compliments.

Chia Seed Breakfast Pudding

Have you heard about the latest chia seed craze?? I swear I’m not crazy – they are my new favorite breakfast food! I think this meal is the perfect substitute for oatmeal in the summer. I have been eating it for breakfast almost every single weekday morning for the last two months and I still get excited every time. It is perfectly convenient for bringing breakfast to work. I convinced two of my coworkers to try it out as well, and they’ve been making it for themselves ever since.

Chia seeds look just like little seeds that you would plant in your garden. I have been buying them at Trader Joe’s in the purple pouch below. When you mix them with milk and let them sit overnight, they absorb all of the liquid and you get a consistency similar to tapioca pudding. The best part is that you are eating something extremely healthy and good for your body!  They are packed with protein, fiber, antioxidants, and Omega-3 fatty acids. Plus, they are low in calories but very filling! What more can you ask for?

There are two versions that have become my favorites: Berry Chia Seed Pudding and Banana Chia Seed Pudding. Both are just variations on mixing milk and chia seeds. I can’t really decide which one I like better, so I make both, mainly depending on what type of fruit I have in my kitchen at the time.

Berry Chia Seed Pudding

Ingredients:

  • ½ cup coconut milk (or whichever milk you prefer, but I swear by the coconut milk pictured above from TJ’s)
  • 2 Tablespoons chia seeds
  • ½ teaspoon honey (or more if you prefer)
  • ½ cup berries (I used blueberries and chopped strawberries)
  • Optional toppings: more berries, slivered almonds, granola, more honey

Directions:

In a Tupperware bowl, mix together the honey and berries first. (If you add the honey after the cold milk, it will clump together and not mix well.) Next, stir in the chia seeds. Then, add the milk and mix until all of the chia seeds are submerged in liquid. Put on the lid and refrigerate overnight (or at least 4 hours). In the morning, stir up the pudding, add any topping you would like, and enjoy it cold.

Recipe Binder

My younger sister graduated from college last weekend – congratulations, Emily!! I am so proud of her, she is going to make an amazing teacher! I’m excited because Emily is taking after my own heart (and our mother’s) by wanting to learn how to cook! So, for her graduation, I made Emily her own recipe binder to pass along my favorite recipes and for her to collect new ones. Having a recipe binder is the best way to keep all of your recipes in one place, especially since so many recipes are online these days. You just need a cute binder, page protectors, section dividers, and print-outs of your recipes.Recipe Binder / www.sarasfavoritethings.wordpress.comFirst, determine what sections you would like to have in your binder and make the labels for each section. For Emily’s binder, I used these sections: Breakfast, Breads, Appetizers, Salads & Sides, Dinner, Cookies & Bars, Cakes & Pies, and Other Desserts. Depending on what kind of cooking or baking you like to do, you can decide which sections work for you. One of my favorite things about the binder is keeping a section at the back for “Recipes to Try”. These are recipes that look good and I have printed out, but not made yet. When I’m looking to do some experimenting, I flip to this section to find a new recipe to try out. Once I’ve tested the recipe and found it’s worth making again, I move it forward into the correct section. Otherwise, I toss it out.Recipe Binder / www.sarasfavoritethings.wordpress.com

If you want to get a little more creative with it, you could make yourself a front page. I used pictures I cut out from food magazines and some alphabet stickers to make this one for Emily:Recipe Binder / www.sarasfavoritethings.wordpress.comAlso, if it’s a gift for someone, you could use a cute recipe card to write them a little note and stick it behind the front page like this:Recipe Binder / www.sarasfavoritethings.wordpress.com Finally, take all of the recipes and insert them into page protectors. You can put two recipes in each page protector so that they are back to back and allows you to flip through them like a book. Then, go in and arrange all of the recipes into the different sections. I keep extra page protectors in the back for new recipes.

When you head to the kitchen to cook, just remove the particular recipe from the binder you want to make and clip it to your fridge. The plastic page protector acts as a natural shield to spills that you can easily wipe clean when you are done with it! Having a recipe binder makes it so convenient to keep track of your recipes and keep them in good shape. Try making one for yourself! Maple Cinnamon Almond Butter

Happy Mother’s Day, everyone! And especially you, Mom!! I’m so lucky to have you as my best friend! I don’t know how I got to be so lucky – you are the most loving and fun-filled person I know. And for that, I sent you the most delicious thing I’ve eaten in months. This Maple Cinnamon Almond Butter makes my mouth water just thinking about it on a warm piece of toast!

Maple Cinnamon Almond Butter / www.sarasfavoritethings.wordpress.comOnce you’ve tried this almond butter, you will never want to buy store-bought peanut or almond butter again! It tastes so much fresher and you have complete control over what ingredients are used. It’s not complicated to make, as long as you have a food processor. For this version, you will first coat the almonds in maple syrup before roasting them in the oven.

Maple Cinnamon Almond Butter / www.sarasfavoritethings.wordpress.comAfter tasting a few of the roasted almonds (you won’t be able to help yourself, they are delicious!), it’s time to put them in the food processor. In the first few minutes, you will get an almond flour. You can see how it piles up on the sides, which is why you while have to continue to switch off the processor and scrape down the sides. After awhile, it will start to look like it’s getting wet  and eventually “snowball” into a big clump. Let it continue to run at this point because after a few more seconds it will “butterize” into creamy almond butter.

I know my mom will attest to how delicious this almond butter is, since she enjoyed it with her coffee this morning! Of all of the flavors I sent her in the mail, we both agreed this was our favorite!

Maple Cinnamon Almond Butter

Ingredients:

  • 2 cups almonds
  • 5 Tablespoons maple syrup
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon

Directions:

Preheat your oven to 325 degrees. Roasting your almonds will make them break down easier in the food processor. Line a pan with parchment paper (to avoid a mess!) and pour the almonds and maple syrup in the center. Stir the almond up so they are coated in maple syrup and then spread them out in a single layer. Roast for about 15-20 minutes, stirring every five minutes. Watch carefully to not burn them!

Let the almonds cool for a couple minutes and then put them in the food processor. You will have to scrape down the mixture several times until you get them to “butterize”.  Be patient, it will happen! Reference the pictures above to see the stages. In total, it can take up to 15 minutes.

Once you’ve reached the butter stage, add the salt and cinnamon and process for another minute.

You can either store on the counter or in the refrigerator. Enjoy on toast, sliced apples, a banana, or a spoon!

*If you haven’t gotten a smooth consistency after 15 minutes, you could add ½ a tablespoon of neutral flavored oil, such as coconut oil, but I have not had any batches needing oil yet. And I’ve made A LOT of almond butter in the last few months. Our kitchen Tupperware has dwindled because they are all stacked in the refrigerator with different recipe combinations!

Silver Linings Playbook

So I was a little late to the game on this one, but I finally saw Silver Linings Playbook last week. WOW, you guys, you have to see this movie!! It is seriously the best movie I’ve seen in a LONG time. I think I was laughing every 3 minutes at all the witty comments. I would call it a romantic comedy, but it is much more edgy than your average chick flick, playing on the emotions that Pat (Bradley Cooper) and Tiffany (Jennifer Lawrence) are experiencing while dealing with very difficult life situations. I’ve never been a Bradley Cooper fan, but he is fantastic in this role. This movie is not just for the ladies, both my dad and my boyfriend loved it- Andrew even watched it with me a second time!

All of the characters are whacky and chaotic, but because they are so honest and real, it is easy to connect with them and feel completely involved in their situations. Pat loses everything and moves back in with his family after spending time in a state institution. Anyone with a family can appreciate the humor related to Pat moving back in and dealing with his father (Robert De Niro). Tiffany offers to help Pat reconnect with his wife if he does something for her in return. They both find themselves in bad predicaments in life, but the movie shows you that despite their imperfections, they can still make the choice to find happiness: the “silver lining”. How great is that??
